Chocolate Cake!

Okay, I'm not a big sweets person, so I surprised myself that with all the food items I have to give up that Chocolate Cake is what I have been craving all week - not steak, not cheddar cheese, not any of the things that you would guess.

So - I decided I would figure out how to make a yellow cake with chocolate icing that contains No Gluten and No Dairy.  I was surprised how easy it was and what was available in your everyday grocery store.

Betty Crocker - Gluten Free Yellow Cake Mix

  • Make according to directions, but substitute a lactose free, gluten free butter substitute - I used Blue Bonnet Lactose Free (which comes in sticks).

Pillsbury Chocolate Fudge Frosting (in a can) - gluten and dairy free (made with soy).

Simple.  Craving Satisfied.

  1. I have been trying to figure out why I can't eat bread with alpha gal. Then I see you used the gluten free cake mix I am also allergic to dairy now. A swollen throat and trip to hospital clued me in on that. Can you tell me why the gluten causes reactions? Thank you . Sherry

  2. Sorry for the slow response - just saw your comment. I had a sensitivity to gluten prior to Alpha Gal Allergy - I am not allergic to wheat nor am I classified as having celiac disease. Gluten/Wheat has always made me just feel poorly, bloated and stuffy (nasal). Perhaps some breads you are eating have dairy in them - butter or milk? I have had Alpha Gal for almost 3 years and have found that I am fine with fat free dairy - fat free yogurt, skim milk, and fat free sour cream (which can be hard to find). Fat free cheese is pretty bad, but have found some good soy alternatives. Almond Milk and Coconut Milk are good substitutes - especially for ice cream and whipped cream. My allergist suggested that I try moving up in the dairy fat to 1%, then 2% - which I tried, and had another reaction. I avoid dairy that has any fat content now. Just not worth the risk. The alpha gal allergy is related to lower classification mammals and a specific sugar (attached to fats) that we as humans (and other upper class mammals) don't carry the enzyme to break down). Upper class mammals include only Gorilla and Orangutan (and Humans) according to my allergist. Hope this helps!
